Green Tea
Unoxidized LeafAs one of six of the main Chinese categories of true tea, one could possibly spend a lifetime exploring the diversity of green teas from around the world. Green tea is classified as such by its unoxidized leaf.
Ranging from soft and floral nuances to puckering astringency, green tea as a whole is a category rich to explore. Tea is plucked and sorted, then foregoes the withering stage. Instead, depending on the techniques employed by the farmer, the leaves are fixed by utilizing methods such as sun drying, basket firing, pan firing, oven drying, or steam bathing. This process halts any enzymatic activity, thus stopping any oxidation. The tender green leaves are then rolled according to techniques and tradition of the farmer, and sent to dry before packaging and transport.
