Yellow Tea

Lightly Fermented

As one of six of the main Chinese categories of true tea, yellow tea is probably the least known category on this side of the continent. It frequently is grouped in with green tea because each is processed the same way. However, yellow tea differs in that it undergoes an additional step during the processing. The tea is “smothered” or wrapped with damp cloths and kept for a period in a humid environment. During this time, the leaf re-absorbs its own aroma and develops a yellow color. Yellow tea is highly delicate, gentle in flavour, and wonderfully refreshing.
